Vanilla Cake Recipe

I came up with this delicious recipe after many failed attempts at creating the perfect Vanilla Cake. I wanted a cake recipe that is moist, yet sturdy, and delicious, but not to sweet and overpowering. I wanted something reminiscent of the cakes that I would eat out of a cake box as a child. I wanted those same flavors, but from a cake made from scratch. So after trial and error, I came up with this amazing cake recipe that I absolutely love! I use this Vanilla Cake Recipe for all of my Vanilla Cakes and the best thing is that it is so versatile.

I have used this recipe for my Blueberry muffin cake, you can turn it into a Strawberry cake, Lemon cake,...the possibilities are endless.



*Ingredients:

-2 cups Bisquick Baking Mix

-1 stick butter (softened)

-2 eggs

-1/4 cup granulated sugar

-3/4 cup sweetened condensed milk

-1/4 cup water

-1 teaspoon vanilla extract

-1-1/2 teaspoons baking powder

-a pinch of salt



*Yield: This is a single batch recipe good for 2 (8 inch) round cake pans or a thick single cake layer.


*Directions:

In a mixer, beat softened butter and sugar until creamy.

Add in the eggs and vanilla extract and mix again until incorporated.

In a separate bowl combine the flour, baking powder, and salt, set aside.

In another bowl or cup mix the sweetened condensed milk and water together and set aside.

Add 1/4 of the flour mixture to the sugar and butter batter, and mix well on low speed.

Add 1/3 of the sweetened condensed milk mixture to the batter, and mix.

Keep adding the flour mixture and milk mixture alternating after each one starting and ending with the flour mixture. Add the flour mixture in 4 parts and the sweetened condensed milk mixture in 3 parts, Like so:

FLOUR-MILK-FLOUR-MILK-FLOUR-MILK-FLOUR

Mix well after each addition.

Once everything is combined you will be left with this Amazing Vanilla Cake Batter!

Bake @350 degrees for about 15 minutes if using 2 (8 inch) round pans

or until a toothpick inserted in the center of the cake comes out clean.
