When you think of PB&J you think of Easy on the go snack, but you don't think gourmet! Well I just transformed the simple PB&J into a gourmet snack by changing up the flavors. I made a homemade uncrustables with almond butter and triple berry jam filling! My uncrustables are a great alternative for kids with peanut allergies, and have a great source of protein like peanuts. These have about 10 grams of protein per serving, and are a perfect breakfast or snack for on the go and Back to School! FULL RECIPE VIDEO BELOW⬇️ ⬇️

Tools:
Almond Butter Recipe:
-1-1/2 cups whole almonds
-1/4 teaspoon salt
-1-1/2 teaspoons brown sugar
Roast the almonds at 375 degrees for 5 minutes.
Add them into a food processor, and Process for 5-7 minutes until they turn into a creamy paste consistency.

Then transfer the Almond butter into a bowl, add the salt and sugar for flavor, and mix very well.

Triple Berry Jam:
-1/2 cup fresh blueberries
-1/2 cup fresh raspberries
-1/2 cup fresh blackberrries
-The juice of half a lemon
-1/2 cup brown sugar

Add the berries in a saucepan over medium heat, along with the juice of half of a lemon and the brown sugar.

Cook it down for about 5 minutes. Mash the berries, then continue cooking for another 2-3 minutes until it thickens into a jelly consistency, then let it cool completely.
Cut the crust off of the bread.
*TIP: (Toast the crust, process it, and make homemade bread crumbs)
Fill one side with almond butter and the other with jelly.

Then with a fork make crimps all around the edges of the bread to seal.

Enjoy right away or You can freeze these in ziplock bags for up to a month!
