These Strawberry Shortcakes are perfect! The shortcake biscuits are not too sweet, but get complimented well with the addition of a strawberry whipped cream, fresh strawberries, and a dusting of powdered sugar. These shortcakes are filling and make a perfect tea time treat!
Ingredients
*Shortcakes:
-1-1/2 cups Bisquick Baking Mix
-1/4 cup cold diced Butter
-1/4 cold Water
-1 tablespoon Sugar
-1/8 teaspoon Salt
-1 Egg
*Strawberry Sauce:
-1 heaping cup diced Strawberries
-1/4 cup granulated Sugar
*Strawberry Whipped Cream:
-1 cup Heavy Cream
-1/4 cup granulated Sugar
-1/2 teaspoon Vanilla extract
-Strawberry Sauce
*Toppings:
-Sliced Strawberries
-Powdered Sugar
Directions:
To get started you want to gather all your shortcake ingredients.
In a food processor add the Bisquick, sugar, salt, and butter and pulse until everything is combined. Then add the egg and water while mixing on low. The dough should come together and form a dough ball.
Divide the dough ball into 7 small balls or if you want them to be bigger 5-6 balls.
Then split each ball into 2 separate pieces and flatten them out into disks, with a smaller disk being on top of the bigger disk. This is going to help divide the shortcakes into 2 layers so that they can be filled in the middle.
Bake them at 350 degrees Farenheit for about 12 minutes. And this is why I like using Bisquick especially for this recipe, the shortcakes will puff up ever so beautifully!
Let them cool completely, Then with a knife separate the top from the bottom part of the Shortcake biscuits. Meanwhile let's make the Strawberry Sauce.
To make the Strawberry Sauce, I have almost 2 cups of fresh Strawberries; which when diced turned into just over 1 cup of diced Strawberries. I'm going to add that into a saucepan over Medium heat with 1/4 cup of Sugar.
Cook that for 2 minutes, then with a potato masher mash the strawberries to have more of a sauce consistency. Cook that for an additional 3 minutes stirring occasionally so the sauce doesn't burn. Then set the sauce aside and place in the freezer for about 15-20 min to speed up the cooling time and cool completely.
Note: If you want to skip this step and buy ready made whipped cream feel free to do so.
Now let's work on the homemade whipped cream! For this you're going to need a whisk, a bowl, heavy cream, sugar, vanilla extract, and a whole lot of arm muscle because we're whisking this by hand!
Combine everything in the bowl and whisk, whisk, whisk, for about 3 whole minutes until a thick cream forms. Now fold in the cooled Strawberry sauce...Ta-Da! You now have Strawberry whipped cream.
Now let's assemble these bad boys! Remove the top of the Shortcake biscuit and fill the center of each one with Strawberry Whipped Cream, I am using a piping bag to do so. Then add Strawberry Slices on top of the whipped cream.
Add the top layer of the shortcake on top and pipe a dallop of the whipped cream on top of that. Finally dust with Powdered Sugar, and Enjoy!
