This is a simple yet Oh so Delicious Tres Leches Cake Recipe. What is a Tres Leches cake? Only the moistest cake to ever exist! It's a classic sponge cake recipe soaked with 3 different types of milk that give it a moist texture and creamy flavor, hence why it's called "Tres Leches" which translates to "Three Milks". The cake is usually topped and filled with whipped cream and fresh fruit. This is my simple delicious version of a Tres Leches Cake. Full Recipe Video Below⬇️⬇️
Ingredients:
*Raspberry Sauce:
-1-1/2 cups Fresh Raspberries
-1/3 cup Brown Sugar
-1/2 Lemon (juice)
-1 teaspoon corn starch or flour (to thicken)
Add the raspberries, brown sugar, and lemon juice to a saucepan over Medium heat. Let reduce for about 5-7 minutes. After 5-7 minutes, add the corn starch or flour and whisk rapidly to mix in and prevent clumps, then let the sauce thicken for 2-3 more minutes, remove from the heat and let cool completely.
*Sponge Cake:
-3 eggs (whites and yolks divided in separate bowls)
-1/2 cup of granulated sugar divided into (2) 1/4 cups
-1 teaspoon vanilla extract
-1 cup Bisquick Baking Mix Flour or *3/4 cups All purpose flour
(I used Bisquick Baking Mix for my recipe, because it is lighter in texture I used 1 cup. If you prefer to use All purpose flour which I have tried this recipe with All purpose flour use 3/4 cups as the All purpose flour is denser.)
Divide the egg whites and egg yolks in two separate bowls.
In a mixing bowl whisk the egg whites until soft peaks form, then add 1/2 cup sugar and keep whisking until stiff peeks form. Once the stiff peaks form, transfer into a separate bowl.
Now whisk the egg yolks with 1/2 cup sugar and vanilla extract until they thicken, get fluffy, and turn pale in color (About 5 minutes).
With a spatula gently fold in the whipped egg whites into the egg yolk mixture, being careful not to deflate the egg whites.
Gently fold in the sifted flour 1/2 cup at a time, mixing until combined. The batter should be thick and creamy!
Pour into cake pans sprayed with non stick cooking spray and lined with parchment paper.
Bake at 350 degrees for 10-15 minutes or until they pass the toothpick test.
NOTE: I used 2 (8) inch cake pans.
*3 milk Soak:
-Heavy cream
-Almond milk or Whole Milk
-Sweetened Condensed Milk
Combine all three milks to make enough mixture to soak the cakes. I combined all 3 milks until I had 1 cup total but I would add a little more if I could.
*Homemade Whipped Cream: Or you can use cool whip!
-1-1/2 cups heavy cream
-1/3 cup granulated sugar
-Vanilla extract
Whip the heavy cream until soft peaks form, add the sugar and vanilla and whip until stiff peaks form.
To assemble the cake add Raspberry sauce onto one of the cake layers, then top with whipped cream.
Add the other cake layer on top. Top with more whipped cream and create a cute spiral design with more raspberry sauce. Enjoy!
