These heavenly Passion fruit tarts are sure to please your taste buds!
These Tarts can easily be made No Bake, and you will be surprised how such a Delicious flavor packed tart can be this Easy to make.
So first things first, I have been trying to get my hands on fresh Passion fruit for years now. Passion fruit is a tropical fruit and it is hard to find especially where I am. I grew up in Puerto Rico and Passion fruit could be found there easily, so it was a big difference here in the states. As soon as I saw my local grocery store had them I almost cried tears of joy. The fruit was not ripe yet when I first bought it so I had to wait 4 whole days to let them ripen and make this recipe. You know the fruit is ready when the skin on the outside is wrinkled and you smell the passion fruit throughout your house, the aroma to some may be a little pungent but still so good. So anyways as soon as I smelled the Passion fruit I knew they were ready to be made into these heavenly tarts that I am so excited to share with you all.
Ingredients
Passion fruit curd:
-1/4 cup Passion fruit juice
-1/3 cup granulated sugar
-1 whole egg + 2 egg yolks
-1 tablespoon bisquick (or corn starch to thicken)
Graham Cracker crust:
-14 graham crackers
-1 tablespoon sugar
-5 tablespoons melted butter
Cheesecake filling:
-1 (8 oz.) package cream cheese
-1 cup sweetened condensed milk
-2 tablespoons bisquick (or corn starch to thicken)
Toppings:
-Passion fruit seeds and pulp
-Blackberries or any berries you want
Directions:
To get started you can use either fresh Passion fruit or Passion fruit Pulp. With 8 fresh Passion fruits I had exactly 1/2 cup of fresh Passion fruit Pulp. I strained the pulp and seeds to get the passion fruit juice (which is what i'm going to use to make the passion fruit curd)
Reserve the pulp and seeds of the Passion fruit for later topping the tarts, you can also scoop that on top of yogurt or eat it just like that. The pulp and seeds of Passion fruit are full of vitamins and antioxidants and are super healthy for you. Did you know that Passion fruit is a Super Food? Delicious and Healthy...I'll take it!
Now to make the Passion fruit curd, add the eggs, Passion fruit juice, and sugar into a bowl and whisk together. Then add that over a double boiler and cook over Medium heat for about 2-3 min, whisking rapidly to avoid scrambling. Once it thickens, add the butter and thickener and keep whisking over the heat for an extra minute.
Once the Passion fruit curd has come together, remove it from the heat and add it into a separate bowl to cool.
While the curd is cooling, let's get started on the crust. This is a super easy Graham Cracker crust. I add the graham crackers into a food processor along with sugar and melted butter until a nice crust forms. Then I add a heaping spoonful of the crust into a greased muffin tin and press it down firmly to pack it together. At this point you can keep this completely no bake and just place it in the fridge to set, but I feel that baking the crust at 350 degrees F for 5 min gives you the perfect sturdy crust and a better end result.
Now let's make the cheesecake layer. Add the cream cheese in a bowl over the double boiler once again until it is slightly melted. Then add the sweetened condensed milk and whisk together very well for about 2 minutes. Add the thickener and whisk for another minute. Remove from the heat once the mixture is thick and silky.
Now you want to spoon a spoonful of the cheesecake layer over the crust and spread it evenly using an offset spatula. Then place this in the freezer, the cheesecake layer will set in about 5 minutes.
After the cheesecake layer has set, you want to add a spoonful of the Passion fruit curd over the cheesecake layer and again spread it evenly using an offset spatula. Then you want to place these in the freezer for about 15-20 minutes.
To remove the tarts from the cupcake pan all you have to do is run your offset spatula over some hot water and run it around the edges of the tarts, they should pop right out. Then you can top the tarts with the Passion fruit seeds and pulp or berries. I topped mine with blackberries and they were absolutely amazing!
