They are both so delicious and I prefer them warm, because I feel the warmth really enhances the flavors in both. When you eat them, it feels like you're eating a Blueberry muffin or a Yummy Moist Banana muffin. These overnight oats are the perfect breakfast and better yet they're healthy!
Overnight oats are different then traditional oats because you don't cook them. You let them soak for at least 8 hours and the oats absorb all that moisture, they soften, and feel like they have been cooked. Personally I like to toast my oats for a few minutes because I don't like the thought of eating fully raw oats.
*You can double this recipe and make a big batch of just the base overnight oats,keep them refrigerated to eat for breakfast all week long, add whatever fruit toppings or fillings you want, and experiment with different flavors.
Ingredients:
*Banana Overnight Oats:
-1 cup Old fashion oats
-1-1/4 cups Almond milk
-1/4 cup Brown sugar
-1/4 Vanilla greek yogurt
-1/2 teaspoon Cinnamon
*Bananas Foster Topping:
-2 Bananas sliced
-3 tablespoons Butter
-1/4 cup Brown sugar
*Blueberry Overnight Oats:
-1 cup Old fashion oats
-1-1/4 cups Almond milk
-1/4 cup Brown sugar
-1/4 Vanilla greek yogurt
-1/2 teaspoon Cinnamon
*Blueberry Topping:
-1 cup Blueberries
-1/4 cup Brown sugar
-Squeeze fresh lemon juice
*Each Recipe Makes about 2 (1-1/2 cup servings)
Directions:
For both the oatmeals, the base is the same. In a saucepan heat the oats for about 5 minutes just to slightly cook them.

Add the oats into a large bowl along with the almond milk and yogurt, and mix well. Then add the brown sugar and cinnamon, mix once again. Now the oatmeal base is done, cover it with plastic wrap and refrigerate it for at least 8 hours, or better yet overnight!

After the oats have been in the fridge for at least 8 hours, It's time to make the delicious toppings that will also be the fillings in this recipe.
For the Bananas Foster, I sliced 2 slightly overripe bananas (for better flavor), then I set them aside. In a saucepan over Medium heat add the 3 tablespoons of butter and 1/4 cup of brown sugar, cook and stir until it melts into a caramel. Add the banana slices into the caramel and cook them in there for about 1 minute. Remove from the heat and set aside...That's the easy Bananas Foster topping!

Now that the oats are ready, add half of the Bananas foster filling into the oatmeal and mix well. Spoon the overnight oats into bowls or cups, and top with the remaining banana's foster...Enjoy!

*For the Blueberry overnight oats I added half of the blueberry mixture into the oats before refrigerating them overnight, but you can do it after it really doesn't make a difference other than the blueberries also absorb the milk.
For the Blueberry topping, add the blueberries into a saucepan over Medium heat along with the brown sugar and lemon juice. Cook for about 3-5 minutes until the sauce thickens into a syrup consistency.

Like I stated earlier, I added half of the Blueberry topping into the oatmeal before I refrigerated it overnight, but you can add it after. Fold in half the blueberry topping (if adding the blueberry sauce before letting the oats soak overnight, refrigerate your oats overnight after adding the blueberries.) If adding the topping after the oats have already soaked overnight, you are ready to serve. Spoon the oats into bowls or cups, top with the remaining blueberry topping and Enjoy!
