French Toast with Peach Compote

Is it Breakfast or is it Dessert? These delicious French Toasts taste like French Toast and Peach Pie had a Baby...and that baby is these Delicious French Toast with Peach Compote! I love French Toast, and the great thing about them is that you can top them with any type of fruit or berries you want, or eat them plain because they're that delicious! The trick to the perfect French toast at least for me, is that I Bake them 2 different ways. I cook them on the griddle with butter for a few minutes on each side, then I pop them in the oven for a few minutes for the most perfect crispy texture. I feel like if I cook them on the griddle alone they turn out too soggy, and if I bake them alone they come out too dry. So by cooking them 2 ways, I get the perfect texture, fluffy inside and crispy outside!

French Toast was one of the first recipes I learned to make as a child from my Mom, because it was one of the first (American or French not sure which one French Toast falls under) recipes she learned to make as a child! My Mom shared with me as she taught me to make French Toast, that when she was in Middle School in Puerto Rico, she had cooking classes and this was the first recipe she learned to make and she never forgot it, then passed it on to me. The way my mom taught me to make them is the traditional way with whole milk and eggs, but I tweaked the recipe and substituted the whole milk with Almond milk and heavy cream, which I feel gives the French Toast a fluffy texture. And of course, the Peach compote was another addition of mine that pairs perfectly with this French Toast Recipe!




Ingredients:

*Peach Compote:

-3 whole peaches

-1/3 cup Brown Sugar

-1/2 teaspoon Apple pie spice



*French Toast:

-1/2 cup Almond Milk

-1/2 cup Heavy Cream

-1 egg

-2-3 teaspoons brown sugar

-1 teaspoon cinnamon

-10 slices of bread cut into diagonals or strips



Directions:

Wash and peel the peaches, remove the seeds and cut into slices or dices. Add the peach pieces into a saucepan along with the brown sugar and spice. Cook on Medium heat for 5-7 minutes. The mixture will have reduced and thickened into a compote. Let it cool.



In a shallow bowl, add the milk, heavy cream, egg and whisk. Then add the brown sugar and cinnamon for flavor and whisk again. My mom adds vanilla extract to hers; I forgot to, but feel free to add vanilla for extra flavor.



Grab your bread slices and dip them in the milk mixture on both sides.



Immediately add them onto a griddle greased with butter over Medium heat.

Cook the French Toast for about 2 minutes on each side. Once done cooking on the griddle, transfer them to a baking sheet lined with parchment paper and bake them at 350 degrees Fahrenheit for about 10-15 minutes depending on how crispy you want them to be.


Top them with the peach compote and syrup, and Enjoy your Dessert.....I mean Breakfast!
