Peach and Almond Crisp

A Super Easy, Delicious, and Healthy Breakfast or Dessert. This is my Easy Peach Crisp that's Gluten Free and can be Vegan friendly! A crisp isn't really considered a pie because it doesn't have a crust, but you get all the flavors of a pie with a delicious crumble topping! It's basically a reversed pie! *FULL RECIPE VIDEO BELOW⬇️⬇️

This Recipe is great because it is Gluten Free, and can be Vegan Friendly if the butter is replaced with coconut oil. There is No flour in this recipe, the crumble topping is made with ground Almonds and ground Oats used as a delicious and healthy flour substitute.



Ingredients:

*Crisp Crumble Topping

-1 cup whole Almonds (lightly salted)

-1/4 cup Oats

-3 tablespoons Butter (cold)

-1/4 cup Brown sugar + another tablespoon (for topping the crumble)

-1/2 cup Oats


*Peach Pie Filling

-3 fresh Peaches sliced or (4 cups sliced peaches)

-2 tablespoons of Lemon juice

-1/3 cup Brown sugar

-1/2 teaspoon Apple pie spice



Directions:

In a food processor add the almonds and oats, process for 1 minute until a thick paste forms. Then add the cold, diced butter and process for another 30 seconds. The mixture will change from a paste to a runnier almond butter consistency. Transfer it to a bowl.





Mix the brown sugar into the almond and oat mixture (you'll notice the mixture thicken.) Mix in the oats, and finally sprinkle the other tablespoon of brown sugar into the crumble while folding it in. Set the crumble aside for now.





Add the sliced peaches into a saucepan over Medium heat, along with the lemon juice, brown sugar, and spices. Let them cook for 4-5 minutes until a thick sauce forms and the peaches are slightly tender. Then remove them from the heat.





*Since this pie has no crust, spray a 9 inch pie pan with non stick cooking spray, to avoid the peaches or crumble from sticking.

Pour the Peaches into the Pie pan. Then sprinkle the delicious crumble topping evenly all over the top of the peaches.





*This crisp doesn't have to bake for long, since the only "uncooked" ingredient in this recipe are the oats. I bake mine at 350 degrees Fahrenheit for 10 minutes.





Since this doesn't have a crust, you don't have to worry about cutting perfect pie slices. Grab a big serving spoon and scoop a heaping spoonful or two of the crisp into a bowl and Enjoy...a side of vanilla ice cream would be delightful!
