Blueberry and Cream Crepes

A crepe is like a very very thin pancake but better! It is usually filled with cream and fruit, rolled up, drizzled with syrup, fruit sauces, or more cream. This Delicious Blueberry and Cream Crepe Recipe, is filled with a Sweet Cream Cheese filling and Homemade Blueberry Sauce! This makes a perfect Breakfast or Brunch Menu Item!

Ingredients

*Crepes:

-1 cup Bisquick baking mix or flour

-1 egg

-3 tablespoons melted butter

-1-1/2 teaspoons sugar

-Pinch of salt

-1 cup Almond milk


*Blueberry Sauce:

-3 cups blueberries

-1/2 lemon (juice)

-1/2 cup sugar

-2 teaspoons flour or cornstarch (to thicken)


*Cream Filling:

-8 oz cream cheese (softened)

-3 tablespoons of sugar

-1 teaspoon vanilla extract




Directions:

For the crepes, combine the milk, egg, butter, sugar, and salt in a large beaker measuring cup. Then add the baking mix and mix until you have a slightly runny batter.



Spray your griddle or pan with cooking spray to prevent the crepes from sticking. I have my griddle on Medium heat. Pour the batter onto the griddle using the beaker of the measuring cup, I poured until the batter formed into 3-4 inch disks.




After about a minute or so, flip the crepe over and cook on the other side for another minute. Then remove them from the griddle. The crepes will be thin, spongy, and easy too fold or roll.




For The blueberry sauce, add the blueberries into a saucepan on Medium heat, along with the lemon juice and sugar and mix together. Cook for about 7 minutes. After 7 minutes you'll notice the blueberries bubbling and extra liquid in the pan released from the blueberries.




I let the blueberries reduce for an extra 5 minutes or so, as this keeps cooking the liquid will eventually thicken and turn into a syrup consistency.But I'm going to speed up the process by adding 2 teaspoons of the Bisquick (or you can use cornstarch) into the blueberry sauce, mixing it in quickly to cook, and help thicken the blueberry sauce. After a few seconds you will notice the sauce start to thicken. At that point you can remove the sauce from the heat and let it cool in the refrigerator for a few minutes.





For the cream cheese filling, add the softened cream cheese into a small bowl along with the sugar and vanilla and mix until smooth and creamy.





To Assemble the crepes, spread a spoonful of the cream cheese filling into the centre of the crepe, and then spread blueberry sauce over that. Roll the crepes up, drizzle with mire blueberry sauce or syrup and ENJOY!
